Meta description: Stuck on what to cook tonight? A UK chef’s 10-minute method: mood, time, allergens, then Inspire Me. 18 free recipes, no card.
TLDR: “What to cook tonight” is a decision problem, not a recipe shortage. Lock time, diet, and mood first, then generate one idea you can shop for in a UK supermarket. FlavourFrontier does that with Inspire Me. 18 free recipes, no card, no sign-up to start.

Why 6pm kills good dinners
I have cooked professionally for 28 years, in the UK, Dubai, Holland, and America. Home kitchens fail at the same point restaurant services do when the pass is slammed: too many tiny choices left until you are hungry.
You already know pasta, a stir-fry, sausages, a jacket potato, or a delivery app. You do not need another 40-recipe roundup from BBC Good Food or Jamie Oliver to prove that chicken exists. You need a constraint lock so your brain can stop spinning.
The Food Standards Agency lists 14 major allergens for UK food. If anyone in the house is dairy-free, gluten-free, or nut-free, scrolling recipe sites becomes a second job. That is why “what to cook tonight” searches spike on weeknights: people want an answer that fits this fridge, this diet, this hour.
If decision fatigue is the whole story, we already wrote a companion piece on a random dinner generator. Tonight’s job is narrower: pick one dinner and cook it.
A 10-minute chef method
Use this before you open a recipe site.
Minute 1-2: Time. Honest cook time, including chopping. 20, 30, or 45 minutes. If you only have 20, do not start a braise.
Minute 3-4: Protein or centre. What you already have: eggs, chickpeas, tinned tomatoes, chicken thighs, frozen fish, leftover roast. If the fridge is empty, pick one cheap centre from Tesco, Aldi, or Lidl.
Minute 5-6: Allergens and diets. Dairy, gluten, nuts, vegetarian. Lock them before you look at ideas. Mixed households need one centre of the plate and toppings on the side, not two full menus. See our allergen-free recipes guide if you cook around the 14.
Minute 7-8: Mood. Comfort, quick, adventurous, budget, family. Mood is faster than cuisine. “Lebanese-ish chickpeas” beats “I must invent a theme.”
Minute 9-10: One idea, then shop or cook. Do not generate five and debate. Generate, pick, move.
That last step is what FlavourFrontier is built for. Mood, meal type, diet, cook time, servings, health goal, allergens. Hit Inspire Me. No email to start.
Easy dinners that still taste like food
Easy does not mean bland. Seasoning, acid, and a browned edge do more than a longer ingredient list.
20-minute lane
- Eggs, greens, chilli, lemon, toast (dairy-free if you skip butter)
- Chickpeas, tomato, garlic, smoked paprika, spinach
- Frozen prawns or fish, garlic, chilli, lime, rice from the freezer
30-minute lane
- Chicken thighs, onions, spices, yoghurt or coconut depending on dairy
- Lentil dal with frozen spinach and a squeeze of lemon
- Pasta with broccoli, anchovy or miso, olive oil, pepper
45-minute lane (still a weeknight)
- Tray roast: sausage or halloumi (if dairy is fine), peppers, onions, cumin
- A simple curry with one protein and a bag of frozen veg
- Batch a pot, eat tonight, pack tomorrow
NHS Healthier Families dinners are a decent public starting point if you want checked nutrition. The gap is personalisation: they cannot know your wife is dairy-intolerant and vegetarian, which is exactly why I built FlavourFrontier around allergens and mood rather than a static list.
For “healthy” as a goal rather than tonight’s panic, use the healthy recipe generator piece. Do not clone another GLP-1 meal plan; those posts already exist.
Allergens, vegetarians, mixed houses
UK weeknights are rarely one diet. One meat-eater, one vegetarian, one dairy-free is normal.
Rules that work in my house
- One base (grains, roast veg, stew) that everyone can eat
- Protein split: chicken or fish on the side, beans or eggs on the other
- Dairy as a topping, never the only sauce (coconut, tahini, olive oil + lemon as backups)
- Heat on the table, not in the pan, if kids are eating
A generator that cannot exclude allergens from the first idea will waste the 10 minutes you just saved. ChatGPT can brainstorm. It will not remember your household the way a product with filters will.
What to cook tonight vs a random generator
| Need | Best tool |
|---|---|
| One dinner, now | Constraint lock + Inspire Me |
| Break the same five meals | Random-but-filtered generator |
| Whole week + shop | Planner and list (we already cover this cluster; do not start another meal-planner article) |
| Allergen technique | Allergen guide + filters |
Randomness without time and diet is a party trick. Structured inspiration is dinner.
How FlavourFrontier answers tonight
Open app.flavourfrontier.co.uk.
- Pick mood (Quick & Easy is the weeknight default)
- Meal type: dinner
- Diet and allergens
- Cook time and servings
- Health goal if you have one (high protein, lighter, and so on)
- Inspire Me
You get ideas, not a lecture. Drag a keeper into the week if you want a plan later. Build a shopping list from what you chose.
Free start: 18 recipes. No card. No sign-up to hit Inspire Me. Email comes later if you want to save. After 18, a 7-day trial, then £6.99/month or about £5/month on annual.
I am a chef, not a spreadsheet. The app is a co-pilot. You still brown the onions.
A week of “tonight” ideas from UK shops
These are patterns, not branded recipes. Swap protein to match the house.
| Night | Pattern | Shop notes |
|---|---|---|
| Mon | Chickpea tomato stew, greens, lemon | Tinned chickpeas, frozen spinach |
| Tue | Tray chicken or tofu, peppers, cumin | Thighs or extra-firm tofu |
| Wed | Egg fried rice, frozen veg, chilli | Use leftover rice |
| Thu | Lentils, coconut or tomato, spices | Red lentils cook fast |
| Fri | Fish or prawns, garlic, salad, bread | Frozen fish is fine |
| Sat | Slightly slower: a stew or a roast tray | Batch for Sunday lunch leftovers |
| Sun | Planned leftover remix | Soup, wraps, fried rice |
If you want the generator to keep doing this without you inventing the table, that is the product.
